Browned Rutabaga with Caramelized Onion and Sweet Potato
Ingredients:
1 Rutabaga
3 garlic cloves
1 onion
Olive Oil
2 sweet potatoes
A dash of salt & pepper
Optional: onion powder and/or garlic powder
Directions: Peel and thinly slice the rutabaga and sweet potatoes. This works best with a mandoline. Set aside. Lightly drizzle pan with olive oil. Add garlic and onions and cook until brown, stirring occasionally. Next, add in the sliced rutabaga and sweet potatoes. Add the seasonings (of your choice). Cook until tender- about 20 -30 minutes!
P.S. I love rutabaga! Rutabaga is a low calorie, low fat root vegetable that contains a ton of nutrients. It is high in vitamin C, B-6 and Magnesium… to name a few!
