Fajita Stuffed Bell Peppers

Fajita Stuffed Bell Peppers (Beef or Shrimp)

Ingredients:

5 bell peppers (slice top off and remove seeds)

1 pound organic grass fed beef or wild caught shrimp

Homemade Taco Seasoning (recipe below)

1 onion (sliced)

1 bell pepper (sliced)

3 roma tomatoes (cubed)

Homemade Taco Seasoning:

1/4 cup chopped onion

2 cloves fresh garlic (minced)

1 tablespoon cumin

2 teaspoons chili powder

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon red pepper

1 teaspoon basil

1 teaspoon oregano

Instructions:

Prepare bell peppers and set aside. Add remaining ingredients (beef or shrimp, taco seasoning, sliced vegetables) to lightly oiled cast iron pan.   Cook 10 – 12 minutes on medium heat or until beef is no longer pink.  Stuff prepared bell peppers with the beef or shrimp fajita mixture.   Place stuffed bell peppers on a shallow, lightly oiled baking pan.  Tightly cover with lid or aluminum foil.  Bake in oven at 350 degrees for about 15 minutes or until peppers are tender, serve immediately.

Optional:

Sprinkle with red crushed chili pepper, fresh cilantro and/or green onion.

Serve with fresh homemade guacamole.
