Party Hearty Taco Salad
(Gluten Free, Dairy Free, Sugar Free, Soy Free)
Ingredients:
1 pound organic grass fed beef
Homemade Taco Seasoning (recipe below)
3 fresh Collard Green Leaves
Sliced Toppings:
black olives
green onion
red onion
small green, red and orange peppers
jalapenos
avocado
Optional: Serve with fresh homemade guacamole and sprinkle with red crushed chili pepper
Homemade Taco Seasoning:
1/4 cup chopped onion
2 cloves fresh garlic (minced)
1 tablespoon cumin
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon red pepper
1 teaspoon basil
1 teaspoon oregano
Instructions:
Add beef and taco seasoning to lightly oiled cast iron pan. Cook 10 – 12 minutes on medium heat until beef is no longer pink. Place fresh collard green leaves on large plate. Spread cooked seasoned beef over the bed of fresh collard greens. Add sliced toppings, then serve.
