Easy & Delicious Roasted Vegetable Medley with Fennel
(Gluten Free, Dairy Free, Sugar Free, Soy Free, Grain Free, Vegan)
Ingredients:
3 whole carrots (sliced)
2 cups brussel sprouts (cut in half)
1/2 purple onion (sliced)
3 green onions (chopped)
6 -12 ounces asparagus (trimmed) – cut into smaller pieces if you prefer
4-6 small sweet peppers (cut in half lengthwise)
2 cloves garlic (minced)
3- 4 small potatoes (sliced)
1 teaspoons fennel seed
salt & pepper to taste
2 tablespoons olive oil
Instructions:
Place all ingredients in lightly oiled baking pan. Drizzle olive oil over the vegetables. Bake in preheated oven at 350 degrees for approximately 45-55 minutes or until vegetables are browned and tender.
