Simply Delicious Crab Cakes

(Gluten Free, Dairy Free, Sugar Free, Soy Free)

Crab Cakes

INGREDIENTS:

1 ½ pounds fresh crab legs

2 eggs

2 tablespoons olive oil

1 tablespoon coconut aminos (I use Trader Joe’s organic brand)

1.5 cups Tiff’s Homemade Gluten Free Bread

Fresh juice from ½ lime or lemon

2 teaspoon mustard seed

Salt and Pepper to taste

Vegetables:

2 green onions (chopped)

¼ cup celery (chopped)

½ white onion (chopped)

¼ jalapeno (chopped)

¼ green pepper (chopped)

INSTRUCTIONS:

In large cast iron pan, add about 2 inches of water, and steam crab legs (covered) for about 20 minutes. Let cool and then remove crab from shell.  Break crab apart into small pieces.  Mix crab and all remaining ingredients in large bowl.  Let stand for about 15 minutes.  Spread crab mixture evenly into muffin cups (filled to top) and bake at 350 degrees for about 15 minutes or until top begins to brown. Makes about 8 crab cake muffins.
