Easy Asian Spring Green Salad with Homemade Chili Oil Sauce

(Gluten Free, Dairy Free, Soy Free, Grain Free, Sugar Free, Vegan/Vegetarian)

Vietnamese Salad Recipe

Salad Ingredients:

4 cups Spring Salad Mix

1/2 cup peanuts

2 green onions (chopped)

2 carrots (thinly sliced lengthwise)

1/2  cucumber (thinly sliced)

3/4 cup mung bean sprouts

Juice from 1 lime

2 tablespoons fresh basil (chopped)

1 tablespoon fresh mint (chopped)

1 tablespoon fresh cilantro (chopped)

1/2 tablespoon of fish oil/sauce ( I use Red Boat)

For Chili Oil Sauce:

2 tablespoons olive oil

1 tablespoon dried chilis (whole or crushed)

2 cloves fresh garlic (minced)

Instructions for Chili Oil Sauce:

Heat ingredients in small pot over medium low heat for about 5-10 minutes, stirring occasionally. Remove from heat, let cool.

Instructions for Salad:

In a large bowl, mix together all salad ingredients well! Serve with Homemade Chili Oil Sauce on the side! Yummmmmmmmmmmmmmmmm!!
