Easy & Flavorful Chicken Tikka Masala

(Gluten Free, Dairy Free, Soy Free, Sugar Free, Grain Free)

Ingredients:

1 pound of organic chicken breasts (cut into bite size pieces)

1 can organic coconut milk

2 tablespoons olive oil

1 onion (chopped)

1 tablespoon fresh ginger (finely chopped)

5 cloves garlic (chopped)

4 roma tomatoes (chopped)

Spices:

2 teaspoons cumin

2 teaspoons cardamom (or 2 fresh cardamom pods)

2 teaspoons garam masala

2 teaspoons coriander

2 teaspoons paprika

1-2 teaspoons red chili pepper

Salt and pepper to taste

Instructions:

In large cast iron pan, add olive oil, onion and garlic.  Cook on medium heat for about 3-5 minutes, then add remaining ingredients.  Cook on medium heat for about 40 minutes, stirring occasionally, until chicken is no longer pink.
