Homemade Naturally Sweetened Plum Sauce

If you’ve never made plum sauce from scratch, you may be surprised at how the plums (when cooked) breakdown and transform into a beautiful, delightful, bright, nutritious and delicious sauce!   The flavors in this sauce are a great balance of sweet, spicy and tangy with lots of depth.  The sauce in the photo on the left was prepared using a food processor after cooking on stove top and the sauce on the right was not. Both taste the same, it’s just that the one on the left has a smoother consistency.  This sauce can be used on just about anything and I particularly like it on Asian inspired dishes, salads, and meats.  I also find myself enjoying it plain!

Ingredients:

10 fresh plums (cut in half and pitted)

2 cups water

1 small piece fresh ginger (minced)

1 tablespoon apple cider vinegar

1 tablespoon coconut aminos

1 teaspoon sesame oil

1/2 onion (chopped finely)

3 cloves garlic (chopped finely)

6 pitted medjool dates (chopped finely) – Use 2 more if you want a little sweeter . The sweetness also depends on the plums themselves.

1/4 cup lemon juice (squeezed fresh from lemon)

1/2 teaspoon red chilis

Instructions:

Add all ingredients to a large cast iron pan.  Cook on stove top on medium heat, stirring frequently until sauce is formed – about 20 minutes.  Remove from heat and let cool.  Makes about 3 -4 cups.  If you have never made plum sauce from scratch, you may be surprised at how the plums (when cooked) breakdown and transform into a beautiful, delightful, bright nutritious and delicious sauce.

Optional: 

For smoother consistency,  once sauce has cooled, blend for a few minutes in blender/food processor.

Sweetness: 

I recommend starting with 6 medjool dates.   This results in a mild or subtle sweetness. Towards the end of cooking, when the sauce begins to form, you can taste the sauce to determine if more dates are needed for your desired sweetness level.  Just simply chop the additional dates and stir into sauce.
