New Zealand Rack of Lamb (baked to perfection!)
(Gluten Free, Dairy Free, Sugar Free, Soy Free)
Ingredients:
Rack of Lamb (preferably from New Zealand)
1 tablespoon olive oil
2 cloves garlic
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
juice from 1 fresh squeezed lime
1 teaspoon red chile pepper flakes
salt & pepper to taste
Instructions:
Rinse and pat dry rack of lamb. Place in a shallow baking pan. Add all remaining ingredients directly to rack of lamb, thoroughly rubbing into meat. Be sure to coat both sides. Pierce meat with knife to allow the mixture to absorb into the meat. Bake in preheated on at 375 degrees for about 1 hour.
