Slow Cooker Organic 100% Grass Fed Beef Chuck Roast
(Gluten Free, Dairy Free, Sugar Free, Soy Free)
Ingredients:
2-3 lbs of organic 100% grass fed beef chuck roast
4 cloves garlic (chopped) – 2 cloves for browning in pan, 2 cloves for slow cooker
1 onion (chopped) – 1/2 onion for browning in pan, 1/2 onion for slow cooker
3 tablespoons olive oil – 1.5 tablespoons for browning in pan, 1.5 tablespoons for slow cooker
2 bay leaves (fresh or dried)
2 cups brussel sprouts (cut in half)
2 celery ribs (whole or chopped)
4 carrots (cut into bite sizes)
10 baby potatoes (cut in half) or 2 sweet potatoes (cubed)
1 teaspoon garlic powder
1 teaspoon onion powder
salt & pepper to taste
Optional: 2 tablespoons organic coconut aminos (to give it a richer flavor)
Instructions:
Browning the roast before slow cooking is optional but gives it such a wonderful flavor.
For Browning: Add 1.5 tablespoons of olive oil to cast iron pan. Add 2 cloves chopped garlic and 1/2 chopped onion. Saute on medium heat for about 5 minutes. Next, add the chuck roast. Brown both sides of roast (about 4 minutes for each side).
For Slow Cooker:
Add all ingredients to slow cooker (including the oils/garlic/onion from browning) and cook on high for 5-6 hours.
