Succulent Pineapple Shrimp Stir Fry

(Gluten Free, Dairy Free, Sugar Free, Soy Free)

Ingredients:

1 pound wild caught shrimp (raw)

1 cup fresh cut pineapple

1 tablespoon olive oil

2 cloves garlic

sliced vegetables of your choice (asparagus, green pepper, onion, red pepper, orange pepper, mushrooms and/or broccoli)

pepper to taste

Optional: fresh parsley,  cilantro , and/or crushed red pepper flakes to sprinkle on top before serving

Instructions:

Heat olive oil in cast iron skillet on medium heat. Add garlic and vegetables and saute for about 5 minutes.  Next, add shrimp and pineapple and cook on medium heat for an additional 10 minutes or until shrimp is thoroughly cooked.  Add pepper.  Serve immediately.
