German Chocolate Brownies – Vegan

(Gluten Free, Dairy Free, Sugar Free, Soy Free, Vegan/Vegetarian)

Vegan German Chocolate Brownies

Ingredients:

3/4 cup pecans

3/4 cup shredded coconut

1/3 cup cacao (or cocoa) powder

1 vanilla bean

1/3 cup olive oil

1/2 cup coconut cream (thicker than coconut milk). I use Trader Joe’s brand.

3/4 cup pecans

6 medjool dates

1.5 teaspoons baking powder

Instructions:

Blend all ingredients well in blender.  Pour mixture into small greased baking dish and bake for about 1 hour at 375 degrees.  Let cool and set  about 24 hours at room temperature.  Center will be a little soft and creamy.  Makes about 8 servings.
