Easy Organic Hummus Burger Wraps
(Gluten Free, Dairy Free, Sugar Free, Grain Free, Soy Free, Vegan/Vegetarian)
This Organic Falafel burgerwrap right here! Before I even made into burgers I think I managed to eat a whole cup of the mixture by itself. This is so easy to make but the key is starting with dried chickpeas (garbanzo beans)- not from a can! This same recipe can be used for hummus dip too! Score! Chickpeas very high in protein and a great satisfying meat alternative with such versatility!
Ingredients:
1.5 cups organic dried chick peas (garbanzo beans) soaked in cold water overnight
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup olive oil
1 cup fresh parsley
1/4 cup fresh cilantro
3 cloves garlic
1/2 white onion
2 teaspoons cumin
1/2 teaspoon cardamom
1 teaspoon coriander
1/2 teaspoon cayenne pepper
1 teaspoon smoked paprika
1/2 lemon juice (fresh squeezed from lemon)
Garnish:
1/2 white or red onion (thinly sliced)
1 cucumber (sliced)
4 roma tomatoes (sliced)
lettuce – for wrapping
Instructions:
Add soaked chick peas (garbanzo beans), baking soda and salt to medium pot and cover with water. Bring to a boil and then let simmer for about 25 minutes, until chick peas are tender. Let cool and drain.
Next, blend chick peas (garbanzo beans) and all remaining ingredients in blender until a smooth texture/consistency. At this point you have delicious homemade hummus. For burgers, form mixture into patties (makes about 6) and place on oiled baking sheet. Lightly oil tops of patties and bake in oven at 350 degrees for about 40 minutes or until outside is crisp. Turn patties over half way through baking.
Place large lettuce leafs on plate. Add hummus burgers and top with sliced onion, cucumber and tomato!
