Crab On the Cobb Salad

Crab On the Cobb Salad

(Gluten Free, Dairy Free, Sugar Free, Soy Free)

Ingredients:

1 pound of fresh crab meat ( remove meat from legs and claws and cut into small pieces)

16-32  ounces fresh spinach (or your favorite salad green)

1 avocado (sliced)

2 green onion (chopped)

4 hard boiled eggs or egg whites (sliced)

1/3 cup black olives

1 cooked ear of corn (cut from the cob)

2 roma tomatoes ( cubed)

Instructions:

Gently mix all ingredients.  Serve as is or with a homemade vinaigrette dressing.
