Rainbow Salad

(Gluten Free, Dairy Free, Sugar Free, Soy Free, Vegan)

Ingredients:

4 cups fresh organic spinach

10 whole kalamata olives (pitted and cut in half)

10 whoe green olives (pitted and cut in half)

1 cup of cherry tomatoes – orange, red, yellow (cut in half)

1/2 white onion (thinly sliced or chopped)

2 green onions (chopped)

1 red bell pepper

1 orange bell pepper

Optional: salt and pepper to taste, diced jalapenos, fresh cilantro, fresh basil

Instructions:

Gently mix all ingredients. Drizzle with balsamic vinaigrette or try this easy homemade vinaigrette dressing recipe.
